Zucchini Bread
3 eggs
1 1/2 cups sugar
2 tsp. vanilla
3 cups flour
1 tsp. baking soda
2 tsp. cinnamon
1 cup oil
2 1/2 cups grated peeled zucchini
1 tsp. salt
1/4 tsp. baking powder
3/4 cup chopped nuts
Beat eggs until light and foamy. Mix in sugar, oil, vanilla and stir in zucchini. Add dry ingredients and stir well. Fold in nuts. Bake in two 9x5 loaf pans at 350 for 55 minutes.
