Spanish Rice 

Ingredients: 

1 tablespoon butter
1 tablespoon cumin
1 tablespoon chili powder
1 can (8ounces) tomato sauce
1 small tomato diced
1 medium yellow onion, diced
1 clove garlic, crushed
1 small can diced green chilis, drained 
2 cups rice
2 cups water
2 cups chicken or beef broth
salt and pepper to taste

Instructions: 

Melt butter in bottom of a medium saucepan. Add the rice and stir constantly until golden brown. Carefully add the water, broth and tomato sauce. Be careful of the steam. Next add the cumin, salt, pepper, tomatoes, chilis, garlic and onion. Bring to a boil then cover and simmer for twenty minutes. When the rice is tender and the liquid is absorbed turn off the heat. Garnish with diced black olives and grated cheese, if desired.
