Roasted Red Pepper Cracker Spread

Ingredients:

2 cups finely grated cheddar cheese 
1 cup cottage cheese
1/4 cup mayonnaise 
3 drops Tabasco sauce
1 clove garlic, crushed 
Salt to taste
1 red bell pepper, roasted, peeled and chopped* - or - 1-7oz. jar roasted red 
peppers, drained and chopped

Combine cheddar and cottage cheese in bowl. Stir well and
add mayonnaise. Stir in remaining ingredients, adding salt last
and test for taste. Chill and serve with crackers as a spread. 

*To roast pepper - rub with oil and place under broiler until
it blisters and starts to blacken. Turn and roast other side. Seal in 
paper bag and cool to room temperature. Peel, seed and chop.
