Mint Parfait Bars

Cake crust:

1 chocolate cake mix
3/4 cup butter
1 egg
1/2 t. peppermint extract

Cut together well and press into a 15x10 jelly roll pan. Bake at 350 for 10 minutes. Cool completely. 

Filling:

1 pkg. Knox gelatin
1/4 cup boiling water
2 cups powdered sugar
1/2 cup butter
1/2 cup shortening
1 t. peppermint extract
1/2 t. vanilla
green food coloring

Dissolve gelatin in water and let cool to room temperature. Cream sugar, butter and shortening well. Add flavorings and coloring and beat until fluffy. Spread over cooled cake layer. Chill. 

Glaze:

8 oz. chocolate chips
4 T. butter

Melt chocolate and butter together over double boiler. Spread over chilled bars.
