Lemon Bars
Crust:
2 cups flour
1 cup butter
½ cup powdered sugar
Filling:
1 7/8 cup sugar
4 eggs
1/3 cup fresh lemon juice
2 tsp. finely grated lemon peel
¼ cup flour
½ tsp. baking powder
Glaze:
1 cup powdered sugar
enough lemon juice to make a thin glaze
1 tsp. Grated lemon peel
Mix crust ingredients together well with pastry blender. Press into 13 X 9 inch pan and bake in pre-heated 350* oven for 25 min. Beat sugar and eggs together until well incorporated. Add remaining filling ingredients and beat well. Pour over baked crust and return to oven for additional 25 min. Glaze with icing of powdered sugar, lemon juice and lemon peel while still warm.
