Gingerbread

Ingredients:

1 2/3 cup flour
1 1/4 tsp. soda
1 1/2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup sugar
1 egg
1/2 cup molasses
1/2 cup oil
1/2 cup boiling water

In bowl, mix flour, soda, ginger, cinnamon, salt and sugar. Add egg, molasses and oil. Mix well and add boiling water. Pour into a greased and floured 9 inch pan and bake at 350 for 35 minutes. Poke holes in surface and glaze while warm.

Glaze:

1 cup powdered sugar
2 tbs. lemon juice
1 tsp. grated lemon rind

Mix all ingredients together and spread over gingerbread.
