Coffee Cake

Ingredients:

1 1/2 cups flour
2 1/2 t. baking powder
1/4 cup shortening
3/4 cup sugar
3/4 t. salt
3/4 cup milk
1 egg
1 t. vanilla

Blend all ingredients well and pour half into an 8 inch round pan. Sprinkle with 1/2 of the  topping.  Cover with remaining batter,  sprinkle with remaining topping and bake at 375 for 25 - 30 minutes. Drizzle with powdered sugar glaze.

Topping:

1/3 cup brown sugar
1/4 cup flour
1/2 t. cinnamon
3 T. butter

Cut all ingredients together until crumbs form.

The addition of  1/2 cup shredded apple to the batter makes a lovely apple coffeecake.  You may also add  3/4 cup blueberries or 1/3 cup raisins; be creative.  You may also add 1/4 cup finely chopped nuts to the topping ingredients.
