Chili Verde
Ingredients:
1 lb. Cubed lean pork
1 Tbs. Olive oil
1 medium Spanish onion, diced
1 clove garlic, minced
½ cup chopped green pepper
½ cup Anaheim chilies, roasted and diced or 1 small can chopped green chilies
¼ cup jalapenos, roasted and diced or 1 small can chopped jalapenos
1 large can green chili salsa
2 tsp. Ground cumin
1 Tbs. Chili powder
2 tsp. Sugar
½ cup Mexican beer or regular beer
salt and pepper to taste
dash or dashes of hot sauce
Sauté pork in oil until browned. Add onion, garlic, chopped green pepper, chili powder and cumin and continue cooking until vegetables are soft and onion is translucent. Add remaining ingredients except hot sauce and simmer until pork is very tender and sauce has thickened. Before serving, check seasoning and add hot sauce to taste. Serve as burrito filling or over rice.
