California Salsa
1 avocado, peeled and chopped
1 small cucumber, peeled, seeded and chopped
1 large or two small tangerines, peeled and chopped
1 red bell pepper, seeded and chopped
2 jalapenos, seeded and chopped
Green onions (scallions) sliced thin to make 1/4 cup
Red onion, chopped to make 1/2 cup
1 tablespoon fresh cilantro, minced
1 tablespoon lime juice
1 tablespoon olive oil
1 tablespoon rice or white wine vinegar
2 teaspoons sugar
salt to taste
Chop all vegetable ingredients 1/4 - 1/2 inch in size. Quarter tangerine sections.
Place chopped avocado in bowl, add lime juice and toss well. Let set 5 minutes. Add
remaining ingredients, toss well, check seasoning adding salt or sugar if necessary.
Refrigerate at least one hour before serving
