Byerly's Wild Rice Soup

Ingredients:

6 T. butter
1 T. minced onion
1/2 cup flour
4 cups chicken broth
2 cups wild rice, cooked
1/3 cup diced ham or chicken
1/2 cup shredded carrots
1/2 t. salt
1 cup half and half
2 T. white wine
3 T. slivered or sliced almonds
2 t. sugar
parsley, minced

Melt butter in large saucepan. Sauté onion and gently blend in flour, cooking for a couple of minutes over med heat. Gradually blend in broth and sugar and return to a boil. Cook and stir 1 minute then stir in rice, almonds, carrots, chicken or ham and continue to simmer for 5 minutes. Stir in half and half and wine and check for seasoning, adding salt and pepper as needed. Use parsley as a garnish. Serve. 

Wild Rice:

1 cup rice
4 cups water
1 t. salt

Bring rice, water an salt to a boil. Reduce heat and simmer for 45 - 55 minutes. Let set 30 minutes and drain if necessary.
