Baby Back Ribs
You will need one or two
full racks of baby back pork ribs.
1 - 2 hours before grilling, sprinkle meat well with dry
rub and massage in. Cover and refrigerate. Heat grill to high for 10 minutes with lid closed. Place ribs on grill, meat side down, close grill and turn heat to low. After
20 minutes, turn ribs and close grill to continue cooking for another 15 minutes. Baste ribs well with finishing sauce and close grill to continue cooking 10 minutes. Turn ribs, baste well,
turn grill off and let ribs stand another 10 minutes with grill closed. Remove ribs to platter, giving a final brush of finishing sauce, and allow to set covered with foil for 10 minutes. Cut and serve.
BBQ Rub
Ingredients:
6 T. sugar
6 T. salt
1 T. dry lemon
1 T. garlic powder
2 T. Accent
2 1/2 T. black pepper
1 T. paprika
Mix all ingredients and sprinkle generously over meat 1 - 2 hours before grilling.
Finishing sauce:
1 cup Catsup
1 tablespoon Prepared Mustard
1 clove garlic crushed
1 tablespoon Vinegar
1 tablespoon Worcestershire
3 Tablespoons Sugar - brown
1 tablespoon Lemon juice
3 tablespoons Butter
1/4 teaspoon Salt
1/2 teaspoon Black Pepper
Simmer at least 1 hour. Apply when the ribs are nearly done.
